Prepare the Base

Prepare Mixed Greens
Rinse 2 cups of mixed greens under cold water and spin dry in a salad spinner. Set aside in a large serving bowl.
Prepare the Protein

Grill Chicken Breast
If using chicken, season 1 cup of grilled chicken breast with salt and pepper. Grill over medium heat for about 6-7 minutes on each side, or until fully cooked. Slice into strips.

Prepare Tofu
Press tofu to remove excess moisture, then cut into cubes. Sauté in a non-stick skillet over medium heat for about 5-7 minutes until golden brown. Season with salt and pepper.

Prepare Chickpeas
Drain and rinse 1 cup of canned chickpeas. Heat in a small pot over medium heat for about 5 minutes or until warmed through. Season with salt and pepper.
Prepare the Toppings

Chop Vegetables
Chop 1 cup of cherry tomatoes in half, slice 1 whole avocado, and slice 1 whole cucumber into rounds. Set aside.

Prepare Dressing
In a small bowl, whisk together 2 tablespoons of olive oil and 1 tablespoon of balsamic vinegar. Season with salt and pepper to taste.
Assemble the Bowl

Build Your Bowl
In a large bowl, start with your choice of base (either the cooked brown rice, quinoa, or mixed greens). Add your selected protein (grilled chicken, tofu, or chickpeas), followed by the chopped cherry tomatoes, avocado, cucumber, and feta cheese. Drizzle with the prepared dressing.

Toss gently to combine all ingredients, or leave as is for a more visually appealing presentation. Serve immediately and enjoy your customized bowl!
