Method
Prepare Apple Chutney

Cook the Ingredients
In a saucepan, combine apples, onion, brown sugar, apple cider vinegar, ginger, cinnamon, and salt. Cook over medium heat until the apples are soft and the mixture thickens, about 20-25 minutes. Set aside.
Make Bacon Praline

Cook Bacon
In a skillet, cook the chopped bacon until crispy. Remove bacon and drain on paper towels.

Prepare Praline
In the same skillet, add brown sugar and water. Stir until dissolved, then add the cooked bacon and stir until coated. Pour onto parchment paper to cool and harden.
Prepare Cherry Gastrique

Combine Ingredients
In a saucepan, combine cherries, red wine vinegar, and sugar. Cook over medium heat until the mixture reduces and thickens, about 15-20 minutes. Strain if desired and set aside.

Plate the Dish
On each plate, spoon some apple chutney, place the seared foie gras on top, sprinkle with bacon praline, and drizzle with cherry gastrique.
