    Prepare the Octopus

    In a large pot, bring salted water to a boil. Add the cleaned octopus and simmer for about 45-60 minutes, or until tender. Drain and set aside.

    Roast the Peppers

    Preheat the grill. Toss the red and poblano peppers in olive oil and grill for about 10-15 minutes, turning occasionally until charred and tender. Remove from the grill and let them cool. Once cooled, peel off the skins, remove seeds, and slice into strips.

    Cook the Fingerling Potatoes

    While the peppers are roasting, boil the fingerling potatoes in salted water for about 15-20 minutes until tender. Drain and set aside.

    Grill the Octopus

    Preheat the grill to high heat. Cut the cooked octopus into tentacles and brush with olive oil and seasoning. Grill the octopus for about 3-5 minutes on each side until slightly charred.

    Combine and Serve

    In a serving dish, arrange the grilled octopus, roasted peppers, boiled fingerling potatoes, and grape tomatoes. Drizzle with chimichurri sauce before serving.
