Method

Preparation of Filet Mignon

    Cook the Filet Mignon

    Season the filet mignon with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear each side for about 4 minutes for medium-rare. Remove from heat and let rest.

    Crust the Filet Mignon

    Top each filet with crumbled Stilton cheese and place under a broiler for 2-3 minutes until the cheese is melted and golden.

Preparation of Ricotta Gnocchi

    Prepare the Gnocchi Dough

    In a bowl, combine ricotta cheese, flour, egg, and nutmeg. Mix until a dough forms. Roll into ropes and cut into small pieces.

    Cook the Gnocchi

    Boil a pot of salted water and cook the gnocchi until they float to the surface. Remove and set aside.

Preparation of Shiitake Mushrooms

    Sauté the Mushrooms

    In a skillet, melt butter over medium heat, add sliced shiitake mushrooms and minced garlic. Sauté until mushrooms are tender and golden.

Preparation of Sautéed Spinach

    Sauté the Spinach

    In a separate skillet, heat olive oil, add minced garlic and fresh spinach. Sauté until wilted.

Preparation of Crispy Shallots

    Fry the Shallots

    Slice shallots thinly, dust with flour, and fry in hot oil until golden and crispy. Drain on paper towels.

Preparation of Rosemary Brown Butter

    Prepare Brown Butter

    In a saucepan, melt butter with rosemary sprigs over medium heat until it turns golden brown and fragrant. Remove the rosemary before serving.
