Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined. Press the mixture into the bottom and slightly up the sides of a 9-inch springform pan. Bake for 8-10 minutes, then remove from the oven and let cool.

Make the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the remaining 1/4 cup sugar and continue to beat until well combined. Add the sour cream, vanilla extract, and eggs, one at a time, mixing well after each addition. Finally, add the flour and mix until just incorporated.

Combine and Bake
Pour the cream cheese filling into the cooled crust. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the edges are set but the center is still slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.

Chill and Serve
After the cheesecake has cooled, refrigerate for at least 4 hours, preferably overnight. Once chilled, remove from the springform pan, slice, and serve.
