Burrata Preparation

    Prepare the Burrata

    Place the burrata on a serving plate and set aside.

Eggplant Agrodolce

    Cook the Eggplant

    In a skillet, heat olive oil over medium heat. Add the diced eggplant and sauté until soft, about 5-7 minutes.

    Add Agrodolce Ingredients

    Stir in red wine vinegar, sugar, salt, and black pepper. Cook for another 3-5 minutes until the mixture thickens. Remove from heat and let cool.

Relish Preparation

    Mix the Relish

    In a bowl, combine chopped Kalamata olives, capers, and roasted red bell pepper. Mix well and set aside.

Balsamic Reduction

    Make the Balsamic Reduction

    In a small saucepan, bring balsamic vinegar to a simmer over medium heat. Reduce heat to low and let it simmer until thickened, about 10-15 minutes. Set aside to cool.

Brioche Toast

    Toast the Brioche

    In a skillet, melt butter over medium heat. Add the brioche slices and toast each side until golden brown, about 2-3 minutes per side.

Assembly

    Assemble the Dish

    On the plate with burrata, top with eggplant agrodolce, followed by the olive and caper relish. Drizzle balsamic reduction over the top and serve with brioche toast on the side.
