    Prepare Bone Marrow

    Preheat the oven to 450°F (230°C). Place the bone marrow bones in a baking dish, sprinkle with salt and black pepper, and roast for about 20-25 minutes until the marrow is soft and bubbling.

    Fry Oysters

    In a skillet, heat some butter over medium heat. Add the fresh oysters and cook until they are golden brown, about 2-3 minutes per side. Remove and set aside.

    Make Spinach Mixture

    In the same skillet, add more butter and sauté the minced garlic until fragrant. Add chopped spinach and parsley, cooking until wilted. Stir in the Parmesan cheese and lemon juice, mixing until combined. Remove from heat.

    Prepare Hollandaise Sauce

    In a heatproof bowl over simmering water, whisk together egg yolks, white wine vinegar, and a pinch of salt until the mixture thickens. Slowly drizzle in melted butter while whisking constantly until the sauce is creamy and smooth. Adjust seasonings with salt, pepper, and hot sauce.

    Toast Brioche

    Toast the brioche slices until golden brown. Cut into points.

    Assemble and Serve

    On each toasted brioche point, place a spoonful of the spinach mixture, top with a fried oyster, and a spoonful of roasted bone marrow. Drizzle with hollandaise sauce before serving.
