Prepare Bone Marrow
Preheat the oven to 450°F (230°C). Place the bone marrow bones in a baking dish, sprinkle with salt and black pepper, and roast for about 20-25 minutes until the marrow is soft and bubbling.

Prepare Hollandaise Sauce
In a heatproof bowl over simmering water, whisk together egg yolks, white wine vinegar, and a pinch of salt until the mixture thickens. Slowly drizzle in melted butter while whisking constantly until the sauce is creamy and smooth. Adjust seasonings with salt, pepper, and hot sauce.

Toast Brioche
Toast the brioche slices until golden brown. Cut into points.

Assemble and Serve
On each toasted brioche point, place a spoonful of the spinach mixture, top with a fried oyster, and a spoonful of roasted bone marrow. Drizzle with hollandaise sauce before serving.
