Prepare the Dough
In a large bowl, combine flour, sugar, yeast, and salt. In a small saucepan, heat milk until warm (not boiling). Add the milk, egg, and melted butter to the dry ingredients, mixing until a dough forms.

Rise the Dough
Knead the dough for about 5 minutes until smooth. Place in a greased bowl, cover with a cloth, and let rise in a warm place for about 1 hour, or until doubled in size.

Shape the Beignets
Roll out the dough on a floured surface to about 1/4 inch thick. Cut into squares (about 2 inches).

Fry the Beignets
Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Fry the beignets in batches until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.

Dust with Sugar
While still warm, dust the beignets with powdered sugar.

Heat the Cream
In a saucepan, heat heavy cream and sugar over medium heat until sugar dissolves and mixture is hot.

Cook the Mixture
Return the mixture to the saucepan and cook over low heat, stirring constantly until thickened, about 5-7 minutes. Do not boil.

Add Flavor
Remove from heat and stir in cinnamon and vanilla extract. Let cool before serving.
Coffee Ice Cream

Mix Ingredients
In a bowl, whisk together heavy cream, whole milk, sugar, instant coffee granules, vanilla extract, and a pinch of salt until well combined.

Chill the Mixture
Cover and refrigerate for at least 2 hours or until completely chilled.

Churn Ice Cream
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze
Transfer to an airtight container and freeze for at least 4 hours before serving.
