Preheat and prepare pastry
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Lightly dust a clean work surface with the flour.

Roll and portion pastry
Unfold or roll the puff pastry sheet into a roughly 10 x 12 inch rectangle (adjust to package instructions). If using a full sheet, cut into 6 equal squares or 3 long rectangles depending on desired roll size (aim for 3–6 rolls). Keep pastry chilled while you prepare filling if it becomes warm.

Egg wash
In a small bowl, beat the egg with 1 teaspoon cold water to make an egg wash. Reserve for brushing before baking.

Assemble sausage rolls
Divide the cooled filling into equal portions (one portion per pastry piece). Place a log of sausage filling about 1 inch from one edge of each pastry piece, leaving a 1/2 inch border. Lightly brush the opposite edge with egg wash. Roll the pastry over the filling to enclose it, sealing the edge. Place seam-side down on the prepared baking sheet. Use a sharp knife to make 3 small diagonal slashes across the top of each roll to vent steam, if desired. Brush the top of each roll with egg wash.

Combine filling
In a bowl, combine the uncased Irish sausage meat, cooked onion and garlic, chopped parsley, Dijon mustard, breadcrumbs, salt, and black pepper. Mix gently until evenly combined but do not overwork the meat (this keeps rolls tender). Taste a small pinch (optional) by frying a tiny piece to adjust seasoning.

Portion filling
Shape the filling into evenly sized logs (roughly 3/4 inch diameter) to fit the pastry pieces. Chill briefly (10 minutes) if the filling is soft to make assembly easier.
Sweet Pepper Sauce

Puree roasted pepper
Place the roasted, peeled and chopped red pepper in a small blender or use an immersion blender. Add the cream, apple cider vinegar, honey, smoked paprika, salt, and black pepper. Blend until smooth and slightly thickened, scraping down sides as needed. Taste and adjust seasoning—add more honey for sweetness or more vinegar for brightness.

Warm sauce (optional)
If serving warm, transfer the blended sauce to a small saucepan and warm gently over low heat for 2–3 minutes, stirring, until heated through. Do not boil. Keep warm until serving.

Bake rolls
Bake the assembled sausage rolls in the preheated 400°F (200°C) oven for 18–22 minutes, rotating the baking sheet once about halfway through, until pastry is puffed and deep golden brown and the internal temperature of the sausage filling reaches 160°F (71°C).

Rest and serve
Remove from oven and let rest on the baking sheet for 5 minutes. Transfer to a serving platter. Serve warm or at room temperature with the sweet pepper sauce on the side for dipping or lightly drizzled over the top.
