Build the cocktail
Pour 2 oz Paddy's Irish Whiskey into the glass over the ice. Add 0.25 oz simple syrup (about 1/4 oz) and 3 dashes of Angostura bitters directly into the glass.
- 3
Stir to chill and integrate
Using a bar spoon, stir the whiskey, simple syrup and bitters with the ice for 20–30 seconds (about 15–20 full revolutions) until the drink is well chilled and slightly diluted.
- 4
Float the stout
Gently pour 1 oz Guinness over the back of a spoon held just above the drink surface so the stout floats lightly on top rather than mixing fully. This creates a layered mouthfeel with a stout note.

Garnish and serve
Express the oils from an orange peel over the drink by holding the peel over the glass and giving it a firm twist, then run the peel around the rim and drop it into the cocktail as garnish. Serve immediately.
