    Make tamarind syrup

    Combine tamarind paste and 1/2 cup water in a small saucepan and warm over medium heat, stirring to dissolve the paste. Add the granulated sugar and stir until fully dissolved. Bring to a gentle simmer for 2–3 minutes to meld flavors. Remove from heat, let cool slightly, then strain through a fine mesh sieve to remove fibers. Stir in optional 1/2 tsp fresh lime juice. Cool to room temperature before using. Yields roughly 5–6 oz syrup.

    Prepare glass

    If rimming, rub a lime wedge around the rim of a chilled rocks or coupe glass and dip the rim into coarse salt or Tajín. If not rimming, simply chill the glass in the freezer for a few minutes.

    Build and shake

    Add 2 oz Tito's vodka, 0.75 oz tamarind syrup, 2 oz pineapple juice, 0.5 oz fresh lime juice, and a generous scoop of ice to a cocktail shaker. Shake vigorously for 12–15 seconds until well chilled and slightly diluted.

    Strain and serve

    Double-strain (or fine-strain) into the prepared chilled glass over fresh ice if serving on the rocks, or strain neat into the chilled coupe for a shorter serve. This yields a balanced sweet-tart tropical cocktail with smoky-tamarind notes.

    Garnish

    Garnish with a lime wheel or wedge and optionally a small pineapple wedge or leaf. Serve immediately.
