Build the drink
Fill a copper mug or highball glass with ice (about 1 cup). Pour 2 oz Irish whiskey over the ice, then add 0.5 oz fresh lime juice. If you prefer a touch more sweetness, add 0.25 oz simple syrup.

Top and stir
Top with approximately 4 oz chilled ginger beer. Gently stir once or twice to combine ingredients without flattening the ginger beer.
Garnish & Serve

Garnish with a lime wheel or wedge on the rim and a fresh mint sprig laid on top. Optionally slap the mint between your palms once and tuck it into the drink to release aroma.
