Deglaze with wine and finish
Add the brown sugar and thyme, then pour in the red wine. Stir, scraping any browned bits from the pan. Reduce heat to medium-low and simmer, stirring occasionally, until wine has mostly reduced and onions are glossy and jammy, about 8–12 minutes more. Season with salt and pepper to taste. Remove from heat and keep warm.
Ginger Tomato Ketchup (Homemade)

Combine and simmer
In a small saucepan combine crushed tomatoes, tomato paste, brown sugar, apple cider vinegar, grated ginger, minced garlic, Worcestershire sauce, smoked paprika, salt and pepper. Stir to combine and bring to a gentle simmer over medium-low heat.

Reduce to ketchup consistency
Simmer uncovered, stirring occasionally, for 12–15 minutes until slightly thickened. If mixture becomes too thick, stir in up to 2 tablespoons water to reach a spreadable ketchup consistency. Taste and adjust salt, sugar or vinegar as needed. Cool slightly before using; leftovers keep refrigerated for 1 week.

Form patties
Divide the ground Angus into two equal portions (approx. 8 oz each). Gently form into loose patties about 3/4" thick and about 4" across; avoid overworking meat. Make a shallow dimple in the center of each patty with your thumb to help them cook flat.

Season
Just before cooking, sprinkle both sides of each patty with salt and pepper and brush or rub with Worcestershire sauce.

Cook patties
Heat a heavy skillet or griddle over medium-high heat and add 1 teaspoon neutral oil. When hot and shimmering, place patties in skillet. Cook without moving 3 minutes, flip, then immediately top each patty with a slice of Irish cheddar. Cook another 2–3 minutes for medium (adjust to desired doneness). If needed, cover pan briefly to melt cheese. Remove patties and rest 2 minutes.

Build the burger
Spread about 1 tablespoon of the Ginger Tomato Ketchup onto the bottom bun. Place the cheddar-topped patty on the ketchup, pile 2–3 tablespoons of the wine-steeped onions over the cheese, add a small handful of arugula, and optional pickle slices. Spoon remaining ketchup on the top bun and close the burger.
