Overnight Oats Base

Combine base ingredients
In a jar or bowl with a lid (about 20–24 oz capacity), add 1 cup rolled oats, 1 cup milk, 1/2 cup plain Greek yogurt, 1 tbsp chia seeds, 1 tbsp maple syrup, 1/2 tsp vanilla extract and 1/8 tsp kosher salt.

Mix thoroughly
Stir vigorously until the oats are evenly moistened, chia seeds are distributed and the mixture is uniform. Scrape down the sides so nothing is dry.

Chill
Cover and refrigerate at least 4 hours or overnight (8 hours ideal). The oats will soak, thicken and develop flavor.

Prepare toppings
When ready to serve, slice 1 banana and measure 1/2 cup mixed berries. Chop 2 tbsp toasted nuts if not already chopped and set out 1 tbsp shredded coconut and 1 tsp maple syrup.

Cook eggs (optional)
For a warm savory contrast, heat 1 tsp butter or oil in a small skillet over medium-low heat. Crack in 2 eggs and cook to your preference: sunny-side up (cover for 2–3 minutes), over-easy (flip and cook 20–30 seconds), or scramble (whisk eggs with 1/8 tsp salt and pepper then cook, stirring, until set). Season with 1/4 tsp salt and 1/8 tsp black pepper.
