Coffee soak

    Brew 1 cup of very strong coffee or espresso. Let it cool to warm (room temperature) and transfer to a shallow wide bowl. Stir in 3 tablespoons coffee liqueur. Taste and adjust: mixture should be strong but not overly sweet. Set aside.

    Sift 2 teaspoons cocoa powder into a small fine-mesh sieve and reserve for light dusting between layers (optional). Reserve 2 tablespoons cocoa powder listed under Assembly for final dusting.

Mascarpone cream

    Cooked-style egg yolk base (safer, stable)

    Place 4 egg yolks and 2 tablespoons granulated sugar in a heatproof bowl. Whisk until smooth. Set the bowl over (not touching) a saucepan of simmering water (double boiler). Whisk constantly for 4–6 minutes until the mixture is warm (about 160°F/71°C) and slightly thickened and pale. Remove from heat and continue whisking a minute to cool slightly.

    Whisk the slightly cooled yolk mixture into 16 oz mascarpone until smooth and lump-free. Add 1 teaspoon vanilla extract and a pinch of salt; stir to incorporate. Keep chilled.

    In a separate chilled bowl, whip 1 cup cold heavy cream with an electric mixer on medium-high speed until soft peaks form. Start slow to avoid splatter, then increase speed. Do not overwhip.

    Fold one-third of the whipped cream into the mascarpone-yolk mixture gently to lighten it, then fold in the remaining cream in two additions until homogenous and smooth. Use a rubber spatula and turn the bowl rather than stirring aggressively to preserve volume. Taste and adjust salt or vanilla if needed.

Assembly

    Prepare an 8x8-inch or similar rectangular dish (or 9x9) with a light layer of the mascarpone cream spread on the bottom to help stabilize the first layer of ladyfingers.

    Working quickly so the ladyfingers do not become waterlogged, dip each ladyfinger into the coffee mixture for 1–2 seconds on each side — just enough to soak but not to let them break or become soggy. Lay a single layer of dipped ladyfingers, cut side down if needed, snugly across the bottom of the dish. Trim to fit as necessary. Use about half the cookies for the first layer.

    Spread half of the mascarpone cream evenly over the first layer of soaked ladyfingers with an offset spatula (approx 1/2–3/4 inch thick). Smooth the top but avoid overworking.

    Lightly dust the cream with a portion of the reserved cocoa powder from the Coffee soak section using a fine sieve — a light, even layer. This adds contrast and flavor between layers.

    Repeat dipping and arranging the remaining ladyfingers for a second layer over the dusted cream. Spread the remaining mascarpone cream over the second layer and smooth the top.

    Cover with plastic wrap and refrigerate at least 4 hours, preferably overnight (8–12 hours) to allow flavors to meld and textures to set.

    Just before serving, sift the 2 tablespoons unsweetened cocoa powder evenly over the top. Optional: shave 1 ounce dark chocolate over the top for texture and extra depth.

    Slice into squares and serve chilled. Store covered in the refrigerator up to 2 days for best texture; ladyfingers will continue to soften over time.
