    Preheat the oven to 375°F (190°C). Lightly butter a 9-inch (23 cm) round or similar-sized baking dish. In a large bowl, combine 6 cups sliced fresh fruit (a mix of apples, pears, peaches, or plums). Add 2 tablespoons lemon juice and 1 tablespoon orange zest and toss to coat—this prevents browning and brightens flavor.

    Add dried fruit and sugar

    Stir in 1 cup rinsed dried fruit (raisins or dried cranberries) and 1 tablespoon granulated sugar so the fruit releases some juices as it bakes.

    Mix spices

    In a small bowl, whisk together 1 teaspoon ground cinnamon, 1 teaspoon ground nutmeg, 1 teaspoon ground ginger, 1/2 teaspoon ground cardamom, 1 teaspoon vanilla extract and a pinch of salt. Sprinkle the spice mixture over the fruit and toss gently to distribute evenly. Taste a small piece and adjust a pinch more sugar or spice if needed.

    In a medium bowl combine 1 cup all-purpose flour, 1/2 cup rolled oats, and 1/2 cup packed light brown sugar. Add 6 tablespoons cold cubed unsalted butter. Use a pastry cutter or your fingertips to rub the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized bits. Stir in 1/2 cup toasted chopped almonds or pecans if using.

    Transfer the spiced fruit mixture into the prepared baking dish, spreading it to an even layer. Evenly sprinkle the crumb topping over the fruit, pressing slightly so it adheres. If desired, scatter 1 tablespoon coarse sugar over the top for extra crunch.

    Place the dish on a baking sheet (to catch any drips) and bake in the preheated 375°F (190°C) oven for 35–45 minutes, until the topping is golden brown and the fruit is bubbling around the edges. Rotate the dish halfway through baking for even browning.
