    Prep cheese

    Toss the shredded smoked Gouda, Gruyère, and sharp cheddar in a medium bowl with the cornstarch until the cheese is evenly coated. This helps prevent separation and creates a smoother fondue.

    Prepare pot

    Rub the inside of a heavy-bottomed saucepan or fondue pot with the cut sides of the halved garlic clove, then discard the garlic (or mince and add for stronger garlic flavor).

    Heat wine

    Over medium-low heat, warm the white wine in the pot until it is steaming but not simmering (small bubbles around the edge), about 3–4 minutes. Do not boil.

    Add lemon and mustard

    Whisk in the lemon juice and Dijon mustard to the warm wine to add acidity and help the cheese emulsify.

    Melt cheese

    Add the cheese mixture in batches, stirring constantly in a figure-eight motion with a wooden spoon or silicone spatula. Allow each addition to melt and incorporate before adding the next. Keep the heat low to avoid separating.

    Finish and season

    When all the cheese is incorporated and smooth, stir in the kirsch (if using), freshly ground black pepper, and nutmeg. Taste and adjust seasoning — add a pinch more lemon juice or pepper as needed.

    Transfer to fondue pot

    If using a tabletop fondue set, transfer the fondue to the warmed fondue pot set over a low flame or fuel. Maintain a gentle heat so the fondue stays smooth. If serving from the stove, keep over very low heat and stir occasionally.

    Troubleshooting - separated fondue

    If the fondue becomes grainy or separated, remove from heat and whisk in 1–2 tsp warm water or a splash more wine, one teaspoon at a time, until silky. Alternatively, whisk in another small mixture of 1 tsp cornstarch dissolved in 1 tbsp cold water, then gently reheat and whisk to combine.

    Prepare baguette slices: arrange slices on a baking sheet, brush lightly with olive oil (optional), and toast in a 375°F (190°C) oven 6–8 minutes until crisp and lightly golden. Keep warm.

    Prepare baby potatoes: boil whole baby potatoes in salted water until just tender when pierced with a fork, about 12–15 minutes depending on size. Drain, cool slightly, and serve whole or halved.

    Prepare apples and vegetables: core and thinly slice the apple so slices hold on forks. Trim and blanch baby carrots for 2–3 minutes or roast carrots and Brussels sprouts tossed with a little oil at 400°F (200°C) for 18–22 minutes until caramelized.

    Arrange meats and pickles: fold cured meats on a platter and scatter cornichons or pickles on the board for a briny contrast to the rich cheese.

    Serve: place the fondue pot in the center of the table surrounded by dippers. Provide fondue forks or long skewers. Encourage guests to spear dippers and swirl in the fondue, tapping gently to remove excess before eating.
