White Bean & Garlic Base

    Roast the garlic

    Preheat oven to 400°F (200°C). Slice the top 1/4 inch off the garlic bulb to expose the cloves. Place the bulb on a small piece of foil, drizzle with 1 tablespoon olive oil, wrap the foil tightly, and roast on a baking sheet for 30–35 minutes, until cloves are soft and caramelized. Remove from oven and let cool slightly; squeeze out roasted garlic cloves into a small bowl and mash with a fork.

    Prepare beans

    While garlic roasts, drain and rinse the canned cannellini beans thoroughly. Place the beans in a medium saucepan with 1 cup vegetable or chicken stock (or water) and bring just to a simmer over medium heat for 4–5 minutes to warm and soften. Remove from heat.

    Blend until smooth

    Transfer warmed beans and stock to a blender or food processor. Add the mashed roasted garlic (use all roasted garlic cloves), 2 tablespoons olive oil, 1 tablespoon lemon juice, 1 cup grated Parmesan, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Purée until completely smooth and creamy, scraping down the sides as needed. If mixture is too thick, add up to 2–4 tablespoons additional stock or water, 1 tablespoon at a time, until desired consistency is reached.

    Adjust seasoning and texture

    Taste the purée and adjust salt, pepper, and lemon as needed. If you prefer a silkier texture, process an additional 30 seconds. For a looser dip/soup, stir in up to 1/4 cup more stock.

Finishing & Garnish

    Warm and serve

    Pour the puréed mixture into a small saucepan and warm gently over low heat for 2–3 minutes to meld flavors (do not boil). Stir in the remaining 1 tablespoon olive oil.

    Plate and garnish

    Spoon the roasted garlic & Parmesan white bean purée into a serving bowl. Drizzle with 1 tablespoon extra-virgin olive oil, sprinkle 2 tablespoons grated Parmesan, and scatter 1 tablespoon chopped fresh parsley over the top. If desired, finish with 1/4 teaspoon crushed red pepper flakes for heat.

    Serving suggestions

    Serve warm as a dip with toasted baguette slices, crudités, or as a side for roasted vegetables or grilled meat. Leftovers keep refrigerated in an airtight container for up to 3 days; reheat gently, adding a splash of stock if it thickens.
