Prepare cheeses
Remove cheeses from the refrigerator 30–60 minutes before serving to bring them to near room temperature; this enhances flavor. Trim rind from the cheddar and manchego only if desired. Cut aged cheddar into 1/2-inch cubes or thin slices. Slice manchego into thin wedges and leave the Brie wedge whole or cut a small wheel wedge to fit the board.

Arrange cured meats
Fan or fold prosciutto slices into delicate piles (fold each slice in half and roll once). Fold soppressata and coppa into loose rosettes or small stacks to add height and variety. Create at least three distinct piles on the board, spacing them to balance the cheese placements.

Drain olives and peppers of excess oil or marinade if very oily. Place olives in a small bowl or nestle them directly on the board to contain brine. Halve pepperoncini and arrange roasted red pepper slices in a small heap. Scatter cornichons in small clusters so they are easy to pick.

Place smoked almonds and Marcona/candied nuts into small bowls or pile them in separate corners of the board. Spoon fig jam into a small ramekin; place whole grain mustard and honey in tiny spoons or another ramekin. If you like warmed honey, microwave the honey in a small microwave-safe bowl for 10–15 seconds to loosen consistency before serving.

Wash grapes and herbs. Trim grape clusters into small manageable bunches and place them near cheeses that pair well with fruit (Brie, Manchego). Halve fresh figs and arrange cut side up. Fan thin apple or pear slices and toss them in a light squeeze of lemon if you expect them to sit longer than 20 minutes to prevent browning. Tuck herb sprigs between items for color and aromatic appeal.

Select a large wooden board or platter. Start by placing the bowls/ramekins (olives, jam, mustard, honey) to anchor the layout. Add the cheeses spaced across the board, leaving room for slicing. Position the cured meats next to cheeses that complement them. Fill gaps with nuts, grapes, figs, peppers and cornichons, distributing colors and textures evenly. Place crackers and toasted baguette along one or two edges or in a separate tray. Garnish with rosemary or thyme sprigs. Provide cheese knives, small spoons for condiments, and toothpicks for olives or cornichons.

Serve immediately once assembled, or cover with plastic wrap and refrigerate for up to 2 hours. If chilled, remove from refrigerator 15–30 minutes before serving to allow cheeses to come closer to room temperature again.
