    Slice and oil

    Preheat oven to 400°F (200°C). Slice the baguette on a slight diagonal into 20 (about 1/4 inch / 6 mm) slices. Arrange slices on a baking sheet in a single layer. Brush or lightly drizzle both sides of each slice with extra-virgin olive oil and sprinkle with sea salt and black pepper.

    Bake in the preheated oven for 8–10 minutes, flipping once halfway, until edges are golden and crisp but not overly browned. Remove and let cool slightly on a rack.

Horseradish Goat Cheese Spread

    Make the spread

    In a small bowl, combine softened goat cheese, prepared horseradish, chopped chives, lemon zest, and a teaspoon of heavy cream. Use a fork to mix until smooth and spreadable. If too stiff, add up to another teaspoon of cream. Season with 1/4 tsp salt and 1/4 tsp black pepper, tasting and adjusting horseradish level to preference.

    Chill briefly

    Cover and refrigerate the spread for 10 minutes while you prepare the beef so flavors meld and texture firms slightly for easier spreading.

    Marinate briefly

    If your tenderloin is already very lean and tender, keep marinade short. In a shallow dish combine soy sauce, Worcestershire, lemon juice, grated garlic, and 1/2 tsp black pepper. Add the thinly sliced beef and toss to coat. Let sit at room temperature for 10 minutes (no longer than 20 minutes) — this seasons the beef without cooking it.

    Sear (optional) or use raw

    Option A — Quick sear (recommended for slightly caramelized edges): Heat 1 tablespoon neutral oil in a heavy skillet over high heat until shimmering. Working in a single layer, sear slices 10–15 seconds per side until just browned at the edges (you want rare interior). Transfer to a plate and let rest 1–2 minutes before slicing into bite-size pieces if needed. Option B — Serve raw-style (carpaccio): if using sushi-grade beef and preferred, do not sear; pat slices dry and proceed to assembly.

Assembly & Finish

    Spread

    Spread about 1 teaspoon of the horseradish goat cheese onto each crostini slice. For a cleaner presentation, use a small offset spatula or the back of a spoon.

    Top with beef

    Drape or place one thin slice (or a folded small piece) of seared/raw beef over the cheese on each crostini. If beef was seared and sliced, place a 1-inch piece per crostini; if whole thin slice, fold to fit attractively.

    Garnish

    Top each crostini with a few microgreens or a small sprig of arugula, and sprinkle with a pinch of flaky sea salt, a grind of black pepper, and a few snips of fresh chives. Serve with lemon wedges on the side for guests to squeeze lightly over the beef.

    Arrange crostini on a platter and serve within 15 minutes for best texture (crostini crisp, cheese chilled, beef warm or cool as prepared). Leftovers: store components separately for up to 2 days (cheese spread refrigerated; beef refrigerated; crostini stored airtight at room temperature).
