Method

Basic Muffin Batter (makes ~12 muffins)

    Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease lightly. If making fewer muffins, still preheat to the same temperature.

    In a large mixing bowl whisk together 2 1/2 cups all-purpose flour, 3/4 cup granulated sugar, 2 tsp baking powder, 1/2 tsp baking soda, and 1/2 tsp salt until evenly combined.

    In a separate bowl whisk 2 large eggs with 1 cup whole milk, 1/2 cup vegetable oil, and 2 tsp vanilla extract until smooth.

    Make a well in the dry ingredients and pour in the wet mixture. Stir gently with a spatula until just combined — there should still be a few small streaks of flour. Do not overmix to keep muffins tender.

Blueberry Muffins

Chocolate Chip Muffins

    Gently fold 3/4 cup semisweet chocolate chips into another quarter of the base batter (about 4 muffins worth), ensuring even distribution without overmixing.

Banana Nut Muffins
