    Prep the Vegetables

    Chop the ripe tomatoes, fennel bulb, onion, and garlic cloves into small pieces.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and fennel and sauté for about 5 minutes until they are softened.

    Add Garlic

    Add the minced garlic to the pot and sauté for an additional 1-2 minutes until fragrant.

    Cook the Tomatoes

    Add the chopped tomatoes to the pot and bring to a simmer. Cook for about 15-20 minutes, allowing the tomatoes to break down.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If using a regular blender, let the soup cool slightly before blending in batches.

    Add Cream and Basil

    Stir in the fresh cream and chopped basil leaves. Season with salt and black pepper to taste. Simmer for an additional 5 minutes.
