Method

Preparation

  1. 1

    Prepare the Apples

Wash the fresh apples thoroughly to remove any dirt or pesticides. Cut them into quarters, removing the seeds and stems.

  2. 2

    Juicing the Apples

Using a cider press or a juicer, extract the juice from the apple quarters until you have about 10 cups of fresh apple juice.

  3. 3

    Mixing the Juice

In a large mixing bowl, combine the freshly pressed apple juice, water, and lemon juice. Stir well to ensure all ingredients are evenly mixed.

Fermentation

  1. 4

    Prepare for Fermentation

Transfer the apple juice mixture into a fermentation vessel, leaving some space at the top for the foam that will form during fermentation.

  2. 5

    Add Yeast

Sprinkle the champagne yeast over the juice mixture. Allow it to sit for about 10 minutes before stirring gently to incorporate the yeast.

  3. 6

    Add Sugar

Add 0.5 cups of sugar to the mixture and stir well until fully dissolved. This will help in the fermentation process.

  4. 7

    Seal and Store

Seal the fermentation vessel with an airlock and place it in a cool, dark place. Allow the cider to ferment for about 2 to 4 weeks or until fermentation activity has slowed.

Bottling

  1. 8

    Bottling the Cider

Once fermentation is complete, carefully siphon the cider into clean bottles, leaving about an inch of space at the top.

  2. 9

    Seal the Bottles

Seal the bottles with caps or corks. Store the bottled cider in a cool, dark place for at least another 2 weeks to carbonate.
