Cook the Corned Beef
If you haven't prepared the corned beef yet, cook it by boiling in a large pot of water for about 3 hours, or until tender. Once cooked, remove from the pot and let it cool before slicing thin.

Prepare the Sauerkraut
Drain the sauerkraut and gently squeeze to remove excess liquid. Set aside.

Make the House Sauce
In a small bowl, mix together mayonnaise, ketchup, horseradish, and a pinch of salt. Adjust flavors to taste. This will be your house sauce.

Assemble the Sandwich
Take two slices of rye bread and layer them with a generous portion of sliced corned beef, followed by sauerkraut, Swiss cheese, and a drizzle of the house sauce. Top with the remaining slices of rye bread.

Grill the Sandwich
Heat a skillet or a panini press over medium heat. Butter the outside of the sandwich lightly. Place the sandwich on the skillet and grill for about 4-5 minutes on each side or until the bread is golden brown and the cheese has melted.
Serving

Serve the Reuben
Slice the grilled Reuben sandwich in half and serve with your choice of fries or slaw on the side.
