Make the Velouté Cream

Add Stock and Cream
Slowly whisk in the chicken stock, followed by the heavy cream. Stir continuously to avoid lumps.

Season the Sauce
Add salt, black pepper, and fresh thyme. Let it simmer for about 5 minutes until thickened, stirring occasionally.

Mix the Filling
In a large mixing bowl, combine the pulled roast chicken, cooked fingerling potatoes, diced onion, carrots, celery, and frozen peas. Pour the velouté cream over the mixture and stir until everything is well coated.

Prepare the Puff Pastry
Preheat the oven to 400°F (200°C). Roll out the puff pastry sheets to fit your pie dish. Place one sheet into the bottom of the dish.

Bake
Cut a few slits in the top of the pastry to allow steam to escape. Bake in the preheated oven for 30-35 minutes or until the pastry is golden brown.
