    Clean the Clams

    Rinse the fresh clams under cold water to remove any sand or debris. Soak them in a bowl of fresh water for about 30 minutes to help them purge any remaining sand.

    Prepare the Vegetables

    Chop the onion, celery, and mince the garlic. Peel and dice the potatoes into small cubes.

    Cook the Bacon

    In a large pot, cook the smoked bacon over medium heat until crispy. Remove the bacon, crumble it, and set aside, leaving the bacon fat in the pot.

    Sauté the Vegetables

    In the same pot with the bacon fat, add the chopped onion, celery, and minced garlic. Sauté for 5-7 minutes until softened and fragrant.

    Add the Potatoes and Liquids

    Stir in the diced potatoes, thyme, bay leaf, salt, and black pepper. Pour in the chicken or vegetable broth and bring to a boil.

    Simmer the Chowder

    Reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the potatoes are tender.

    Add the Clams and Cream

    Once the potatoes are tender, add the cleaned clams and fresh cream to the pot. Cook for an additional 5-7 minutes until the clams have opened and the chowder is heated through.

    Remove the bay leaf and serve the chowder hot, garnished with crumbled bacon and oyster crackers on the side.
