Grilled Cheese Sandwich

    Prepare the Bread and Cheese

    Lay out the slices of sourdough bread. On two slices, layer one slice each of provolone and smoked cheddar cheese. Top with the other two slices of bread.

    Butter the Bread

    Spread 1 tablespoon of unsalted butter on the outside of each sandwich.

    Grill the Sandwich

    Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes on each side or until golden brown and the cheese is melted. Remove from heat and cut in half.

Tomato Basil Bisque

    Sauté the Onions and Garlic

    In a large pot, heat the olive oil over medium heat. Add the chopped yellow onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional 1 minute until fragrant.

    Add Tomatoes and Broth

    Stir in the canned crushed tomatoes and vegetable broth. Bring the mixture to a simmer.

    Add Basil and Cream

    Once simmering, add the fresh basil leaves and heavy cream. Stir to combine and let simmer for another 10 minutes.

    Season the Soup

    Season with salt and black pepper to taste. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.

    Serve

    Serve the tomato basil bisque hot alongside the grilled cheese sandwich.
