    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the gemelli pasta and cook according to package instructions until al dente. Drain and set aside.

Cheese Sauce

    Make the Cheese Sauce

    In a saucepan over medium heat, combine the fresh cream and all the shredded cheeses (cheddar, pecorino, and gouda). Stir continuously until the cheeses are melted and the mixture is smooth. Season with salt and pepper to taste.

Assembly

    Combine Pasta and Cheese Sauce

    In a large mixing bowl, combine the cooked gemelli pasta with the cheese sauce, mixing well to ensure all pasta is coated.

    Prepare for Baking

    Transfer the pasta and cheese mixture into a greased baking dish. Evenly sprinkle the herbed breadcrumbs over the top.

Baking

    Bake the Gratin

    Preheat your oven to 180°C (350°F). Bake the gratin in the oven for 25-30 minutes, or until the top is golden brown and bubbling.
