    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the Creste Di Gallo pasta and cook according to package instructions until al dente. Drain and set aside.

Caramelized Onions

    Caramelize the Onions

    In a large pan, heat the olive oil over medium heat. Add the sliced yellow onions, salt, and sugar. Cook, stirring occasionally, for about 20-25 minutes, or until the onions are golden brown and caramelized. Remove from heat and set aside.

Cheese Sauce

    Make the Cheese Sauce

    In a saucepan, melt the unsalted butter over medium heat. Whisk in the all-purpose flour and cook for 1-2 minutes until lightly golden. Gradually whisk in the milk, stirring continuously until the mixture thickens, about 5-7 minutes. Remove from heat and stir in the Gruyère and aged cheddar cheeses, black pepper, and nutmeg until melted and smooth.

Rye Breadcrumbs

    Prepare the Breadcrumbs

    In a food processor, pulse the rye bread until fine crumbs are formed. In a small skillet, melt the unsalted butter over medium heat and add the breadcrumbs. Toast for about 5 minutes, stirring frequently, until golden brown. Season with salt to taste.

Assembly

    Combine and Serve

    In a large bowl, combine the cooked pasta, caramelized onions, and cheese sauce. Mix well to ensure everything is evenly coated. Transfer to a baking dish, top with toasted rye breadcrumbs, and bake in a preheated oven at 350°F (175°C) for 15 minutes or until bubbly and golden on top. Serve immediately.
