Dough Preparation

Activate Yeast
In a small bowl, combine the warm milk (110°F) with sugar and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix Dry Ingredients
In a large bowl, whisk together the flour and salt.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.

Let Dough Rise
Place the kneaded dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.
Frying & Serving

Prepare Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Shape Beignets
Once the dough has risen, punch it down and roll it out to about 1/2 inch thick. Cut into squares or rectangles.

Fry Beignets
Carefully drop the dough squares into the hot oil, frying a few at a time for about 2-3 minutes on each side until golden brown.

Drain and Dust
Remove the beignets from the oil and place them on paper towels to drain excess oil. While still warm, dust generously with powdered sugar.

Serve with Ganache
Serve the beignets warm, accompanied by a side of chocolate ganache for dipping.
