Prepare the Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until foamy.

Mix Ingredients
Add flour and salt to the yeast mixture. Stir until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

Let it Rise
Place the dough in a greased bowl, cover with a cloth, and let rise in a warm place for 1 hour or until doubled in size.

Shape the Bagels
Divide the dough into 8 equal pieces. Roll each piece into a ball, then poke a hole in the center and stretch to form a bagel shape.

Boil the Bagels
Bring a large pot of water to a boil. Add the bagels (2-3 at a time) and boil for 1-2 minutes per side.

Bake the Bagels
Preheat the oven to 425°F (220°C). Place boiled bagels on a baking sheet and brush with egg yolk. Top with everything seasoning or leave plain.

In a mixing bowl, combine cream cheese, chopped chives, garlic powder, salt, black pepper, and lemon juice.

Using a hand mixer or a spatula, blend the cream cheese mixture until smooth and well combined.

Taste and Adjust
Taste the cream cheese and adjust seasoning if necessary, adding more salt, pepper, or lemon juice to your preference.
