Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until foamy.

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour and salt.

Combine Ingredients
Make a well in the center of the flour mixture, pour in the activated yeast mixture and olive oil. Mix until it forms a shaggy dough.

Knead Dough
Transfer dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Shape and Second Rise
Punch down the dough, shape it into rolls, and place them on a baking sheet. Cover and let them rise again for about 30 minutes.

Bake
Preheat the oven to 375°F (190°C). Bake the rolls for 15-20 minutes or until golden brown.

Whip Ingredients
In a mixing bowl, combine softened unsalted butter, honey, and sea salt. Use an electric mixer to whip until light and fluffy.

Serve
Transfer the whipped butter to a serving dish and set aside to serve with the assorted rolls.
House Compote

Cook Compote
Cook over medium heat for about 10 minutes, stirring occasionally, until the berries have broken down and the mixture has thickened.

Remove from heat and let the compote cool slightly before serving with the rolls.
