Prepare the Vegetables
Slice the tomatoes and red onions thinly. If using jarred roasted red peppers, drain them and slice them into strips.

Assemble the Panini
On two slices of sourdough bread, spread basil pesto evenly. Layer the roasted red peppers, sliced tomatoes, baby spinach, sliced red onions, and mozzarella cheese on top. Top with the remaining slices of bread.

Grill the Panini
Preheat a panini press or a skillet over medium heat. If using a skillet, you may need a weight to press down on the sandwiches. Place the assembled panini on the press or skillet and cook for about 3-5 minutes, or until the bread is golden brown and the cheese is melted.

Serve
Remove the panini from the heat, let it cool for a minute, then cut in half and serve warm.
