Prepare the Potato Skins
Once the potatoes are done baking, remove them from the oven and let them cool for a few minutes. Cut each potato in half lengthwise and scoop out some of the flesh, leaving a thin layer of potato on the skin.

Stuff the Skins
Sprinkle a generous amount of cheddar and Monterey Jack cheese into each potato skin. Top with the crumbled bacon pieces.

Final Bake
Place the stuffed potato skins back in the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Serving

Serve with Sour Cream
Remove the potato skins from the oven and let cool slightly. Serve warm with a dollop of sour cream on top and sprinkle with chopped chives if desired.
