Preparation of Tartar Sauce

Make the Tartar Sauce
In a medium bowl, combine mayonnaise, dill pickles, lemon juice, capers, salt, and black pepper. Mix well until all ingredients are fully incorporated. Cover and refrigerate until ready to use.

Prepare the Breading
In a shallow dish, combine the all-purpose flour, cornmeal, salt, and black pepper. In another bowl, whisk together the eggs and milk until well combined.

Bread the Haddock
Dip each haddock fillet first into the flour mixture, coating evenly, then into the egg mixture, and finally back into the flour mixture to create a thick coating.

Fry the Haddock
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded haddock fillets. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and drain on paper towels.
Assembling the Sandwich

Assemble the Sandwich
Cut the burger buns in half. On the bottom half of each bun, place a lettuce leaf followed by a slice of fried haddock. Top with a slice of tomato and a generous dollop of tartar sauce. Cover with the top half of the bun.

Serve the fried native haddock sandwiches hot with extra tartar sauce on the side.
