Chicken Parmesan

Prepare the Chicken
Preheat the oven to 400°F (200°C). Flatten the chicken breasts to an even thickness using a meat mallet. Season both sides with salt and black pepper.

Breading the Chicken
Set up a breading station: place flour in one shallow dish, whisk eggs in another, and mix breadcrumbs and Parmesan cheese in a third. Dredge each chicken breast in flour, dip in eggs, and coat with the breadcrumb mixture.

Cooking the Chicken
In a large skillet, heat olive oil over medium-high heat. Cook the breaded chicken breasts for about 4-5 minutes on each side, until golden brown. Transfer to a baking dish.

Add Sauce and Cheese
Pour marinara sauce over the chicken and sprinkle mozzarella cheese on top. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.

Cook the Pasta
In a large pot, bring 4 quarts of water to a boil. Add salt and penne pasta. Cook according to package instructions until al dente. Drain and set aside.

Bake the Garlic Bread
Wrap the bread in foil and bake for about 10-12 minutes. Unwrap and bake for an additional 5 minutes to crisp the edges.

Prepare the Salad
In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Drizzle the dressing over the salad and toss to combine.
