Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour to prevent sticking.

  2. 2

    Melt Butter and Chocolate

In a medium saucepan over low heat, melt the unsalted butter and bittersweet chocolate together, stirring constantly until smooth. Remove from heat and let cool slightly.

Mixing Ingredients

  1. 3

    Combine Sugar and Eggs

In a mixing bowl, whisk together the granulated sugar, eggs, and egg yolks until the mixture is thick and pale in color.

  2. 4

    Add Chocolate Mixture

Slowly add the melted chocolate mixture to the egg mixture, stirring continuously to combine.

  3. 5

    Incorporate Dry Ingredients

Sift in the all-purpose flour and add the vanilla extract and a pinch of salt. Gently fold the mixture until just combined.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

  2. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

Serving

  1. 8

    Cool and Serve

Remove the cakes from the oven and let them cool for 1 minute. Carefully run a knife around the edges of each ramekin and invert onto a plate. Dust with powdered sugar and serve with a scoop of vanilla ice cream.
