Method

Preparing the Chicken Cutlet

    Pound the Chicken

    Place chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.

    Set Up Breading Station

    In three separate shallow dishes, place flour in the first dish, beaten eggs in the second, and bread crumbs mixed with salt and pepper in the third.

    Bread the Chicken

    Coat each chicken breast in flour, shaking off the excess, then dip into the beaten eggs, and finally coat with bread crumbs, pressing to adhere.

    Fry the Cutlets

    Heat olive oil in a large skillet over medium heat. Once hot, add the breaded chicken cutlets and fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assembling the Sandwich

    Prepare the Rolls

    Slice the bulky rolls in half horizontally and lightly toast them if desired.

    Add Marinara and Cheese

    Place a fried chicken cutlet on the bottom half of each roll. Spoon marinara sauce generously over the cutlet and top with provolone cheese slices.

    Melt the Cheese

    Place the assembled sandwiches under a broiler for about 2-3 minutes or until the cheese is melted and bubbly.

    Garnish and Serve

    Top with fresh basil leaves, cover with the top half of the roll, and serve immediately.
