Preparation of Coffee Mixture

Brew Espresso
Brew 1 cup of strong espresso coffee and let it cool down to room temperature.

Sweeten Coffee
Once cooled, mix in 1 cup of granulated sugar until fully dissolved. Set aside.
Preparation of Filling

Whisk Egg Yolks
In a mixing bowl, whisk together 3 egg yolks and 1 cup of granulated sugar until the mixture is pale and creamy.

Add Mascarpone
Add 500 grams of mascarpone cheese and 1 tsp of vanilla extract to the egg yolk mixture. Mix until smooth and well combined.

Whip Cream
In a separate bowl, whip 1 cup of heavy cream until soft peaks form.

Fold Cream
Gently fold the whipped cream into the mascarpone mixture until fully incorporated and smooth.
Assembly

Dip Ladyfingers
Quickly dip 24 pieces of ladyfingers into the coffee mixture, making sure they are soaked but not soggy.

Layer Ladyfingers
Layer half of the soaked ladyfingers in the bottom of a rectangular serving dish.

Spread half of the mascarpone filling over the ladyfingers.

Repeat Layers
Repeat the process by adding another layer of soaked ladyfingers followed by the remaining mascarpone filling.
Chilling and Serving

Chill Tiramisu
Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Before serving, dust the top with 2 tablespoons of cocoa powder and sprinkle with dark chocolate shavings.
