Pasta Dough Preparation

    Mix the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs with your fingers until a rough dough forms.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Prepare the Filling

    In a mixing bowl, combine ricotta cheese, grated Parmesan, chopped fresh spinach, nutmeg, salt, and black pepper. Mix until well combined and set aside.

Pasta Assembly

    Roll Out the Dough

    After the dough has rested, roll it out on a floured surface to your desired thickness (about 1/16 inch). Cut into squares or circles, depending on your pasta shape.

    Fill the Pasta

    Place a small spoonful of filling in the center of each pasta square or circle. Fold over and seal the edges tightly, using a little water if necessary to help seal.

    Make the Sauce

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add cherry tomatoes and cook for 5-7 minutes until they soften.

    Finish the Sauce

    Stir in fresh basil, salt, and black pepper. Cook for an additional 2 minutes and remove from heat.

Cooking the Pasta

    Cook the Pasta

    Bring a large pot of salted water to a boil. Carefully drop in the filled pasta and cook for 3-5 minutes until they float to the surface. Remove with a slotted spoon.

    Serve

    Serve the cooked pasta topped with the fresh tomato sauce. Garnish with additional Parmesan cheese and basil if desired.
