Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with flour or cocoa powder, tapping out any excess.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.

  3. 3

    Mix Eggs and Sugar

In a separate bowl, whisk together the granulated sugar, large eggs, and egg yolks until pale and slightly thickened.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, whisking constantly until fully combined.

  5. 5

    Add Dry Ingredients

Sift in the all-purpose flour and add the pinch of salt. Gently fold until just combined. Avoid overmixing.

  6. 6

    Add Vanilla Extract

Stir in the vanilla extract until evenly distributed.

Baking

  1. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 9

    Cooling Time

Remove the ramekins from the oven and let them sit for 1 minute. Carefully run a knife around the edges to loosen the cakes.

  4. 10

    Invert and Serve

Invert each ramekin onto a plate. Gently lift the ramekin off to reveal the molten chocolate center. Dust with powdered sugar and serve warm with a scoop of vanilla ice cream.
