Brewing Process

    Mashing

    Heat 10 cups of water to 165°F (74°C) and add the pale malt and caramel malt. Maintain the temperature at 150°F (65°C) for 60 minutes.

    Sparging

    After mashing, sparge the grains with hot water to collect enough wort for boiling.

    Boiling

    Bring the wort to a boil and add Citra hops. Boil for 60 minutes, adding Mosaic hops in the last 15 minutes.

    Cooling

    Cool the wort down to 68°F (20°C) using a wort chiller.

    Fermentation

    Transfer the cooled wort to a fermentation vessel and pitch the yeast. Allow to ferment for 2 weeks at room temperature.

    Bottling

    After fermentation, dissolve priming sugar in a small amount of water and add to the beer. Bottle the beer and let it carbonate for another week.
