Cider Making Process

Prepare the Apples
Wash and core the Honey Crisp apples. Chop them into small pieces and place them in a large fermentation vessel.

Add Water and Sugar
Pour the water over the apples and add granulated sugar. Stir well to dissolve the sugar.

Add Campden Tablet
Crush the Campden tablet and add it to the mixture to kill any wild yeasts. Let sit for 24 hours.

Add Yeast and Acid Blend
After 24 hours, sprinkle the yeast and acid blend over the mixture. Stir gently to incorporate.

Fermentation
Cover the fermentation vessel with a clean cloth and let it sit in a dark, cool place for about 1-2 weeks, stirring daily.

Transfer and Bottle
Once fermentation slows, transfer the cider to a clean vessel, leaving sediment behind. Add priming sugar, stir gently, and bottle.

Carbonate
Cap the bottles and let them sit at room temperature for about 1-2 weeks to carbonate.

Refrigerate and Serve
Once carbonated, refrigerate the bottles. Serve chilled and enjoy your semi-dry hard cider!
