Pretzel Dough

Preparation and Baking

Activate Yeast
In a bowl, combine warm water, active dry yeast, and sugar. Stir gently and let it sit for about 5-10 minutes until frothy.

Make Dough
In a large mixing bowl, combine flour and salt. Add the yeast mixture and mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape Pretzels
Preheat the oven to 425°F (220°C). Punch down the dough and divide it into 12 equal pieces. Roll each piece into a rope and twist into a pretzel shape.

Baking Soda Bath
In a large pot, bring 10 cups of water and baking soda to a boil. Boil each pretzel for 30 seconds, then remove and place on a baking sheet lined with parchment paper.

Bake Pretzels
Bake the pretzels in the preheated oven for about 12-15 minutes until golden brown.

Coat with Butter and Cinnamon Sugar
Melt the butter and brush it over the warm pretzels. In a separate bowl, mix cinnamon and brown sugar, then sprinkle over the pretzels.
