Prepare the Dough
In a bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. In a large mixing bowl, mix flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place in an oiled bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Filling
In a bowl, mix ricotta cheese, mozzarella cheese, parmesan cheese, dried oregano, garlic powder, and black pepper until well combined.

Assemble the Calzones
Preheat your oven to 475°F (245°C). Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into a circle about 10 inches in diameter. Place a generous amount of the cheese filling on one half of each circle, leaving a border. Fold the other half over and press the edges to seal. Use a fork to crimp the edges.

Bake the Calzones
Brush the tops of the calzones with the beaten egg for a golden finish. Place them on a baking sheet lined with parchment paper and bake for about 15-20 minutes or until golden brown.

Serve
Let the calzones cool for a few minutes before slicing. Serve warm with marinara sauce on the side for dipping.
