Chicken Al Pastor

    Marinate the Chicken

    In a bowl, combine pineapple juice, chili powder, cumin, garlic powder, salt, and black pepper. Add the chicken thighs and coat well. Marinate for at least 30 minutes.

    Cook the Chicken

    Heat olive oil in a pan over medium-high heat. Add marinated chicken and cook for 5-7 minutes on each side until fully cooked. Remove from heat and let rest before slicing.

Salsa Verde

    Prepare the Salsa

    In a blender, combine tomatillos, jalapeño, cilantro, lime juice, and salt. Blend until smooth. Adjust seasoning if necessary.

Pickled Red Onions

    Pickle the Onions

    In a small bowl, combine sliced red onion and vinegar. Let sit for at least 15 minutes.

Quinoa

    Cook the Quinoa

    In a medium saucepan, bring 2 cups of water to a boil. Add rinsed quinoa, cover, and reduce heat to low. Cook for 15 minutes or until water is absorbed. Fluff with a fork.

Soft Boiled Eggs

    Prepare the Eggs

    Bring a small pot of water to a boil. Gently add eggs and boil for 6-7 minutes for soft-boiled. Remove and place in ice water for 5 minutes before peeling.

Assembly

    Assemble the Power Bowl

    In a bowl, layer warm quinoa, sliced chicken al pastor, avocado, arugula, pickled red onions, soft boiled eggs, and drizzle with salsa verde. Garnish with fresh cilantro.
