Charred Poblano Dressing

Method

Prepare the Guacamole

    Make the Guacamole

    In a bowl, mash the ripe avocados and mix in lime juice, salt, red onion, cilantro, and jalapeño until well combined. Set aside.

Prepare the Dressing

    Char the Poblano Peppers

    Roast the poblano peppers over an open flame or under a broiler until charred. Place in a paper bag for 10 minutes to steam, then peel, seed, and chop.

    Make the Dressing

    In a blender, combine charred poblanos, olive oil, red wine vinegar, garlic, salt, and black pepper. Blend until smooth and set aside.

Assemble the Salad

    Combine the Ingredients

    In a large bowl, toss the mixed greens, sliced radishes, and crumbled cotija cheese. Drizzle with the charred poblano dressing and mix well.

    Serve

    Serve the salad topped with a generous dollop of guacamole.
