Cooking Instructions
Prepare the Beans
Rinse the red kidney beans under cold water. If using dried beans, soak them overnight and then cook them in boiling water for about 1 hour until tender. If using canned beans, simply drain and rinse them.
Add Garlic and Spices
Add the minced garlic, cajun seasoning, bay leaf, salt, and black pepper. Stir and cook for an additional 2 minutes until fragrant.
Combine Ingredients
Stir in the rinsed red beans and vegetable broth. Bring to a boil.
Simmer
Reduce the heat to low, cover, and let it simmer for about 30 minutes, stirring occasionally.
Cook Rice
In a separate pot, cook the long-grain white rice according to package instructions.
Serve
Once the beans are tender and the mixture has thickened, remove the bay leaf. Serve the red beans over the cooked rice, garnished with chopped green onions.
