    Prepare the Sweet Potatoes

    Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes. Toss them with olive oil, salt, and pepper, then spread on a baking sheet. Roast for 25-30 minutes until tender and slightly caramelized.

    Cook the Turkey Sausage

    In a skillet over medium heat, cook the crumbled turkey sausage until browned and cooked through, about 5-7 minutes. Remove and set aside.

    Sauté the Vegetables

    In the same skillet, add a little more olive oil if needed. Sauté the diced onion and bell peppers until softened, about 5 minutes. Add the diced apple and sauté for another 2-3 minutes.

    Combine Ingredients

    Add the roasted sweet potatoes and cooked turkey sausage to the skillet with the vegetables. Stir to combine and cook for an additional 2-3 minutes. Adjust seasoning with salt and pepper.

    Prepare the Eggs

    In a separate pan, fry or sunny-side up the eggs to your liking.

    Assemble the Dish

    To serve, place a portion of the sweet potato hash on a plate, top with a scoop of ricotta, a dollop of red pepper jelly, and a sunny-side up egg. Serve with a biscuit on the side.
