Prepare the Home Fries
1. Preheat the oven to 425°F (220°C). Cut the russet potatoes into small cubes. Toss them in a bowl with olive oil, salt, black pepper, and paprika until evenly coated. Spread the potatoes on a baking sheet and roast for about 25-30 minutes, or until golden brown and crispy, flipping halfway through.

Make the Brown Gravy
2. In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 2 minutes. Gradually whisk in the beef broth and soy sauce, and bring to a simmer. Add garlic powder, onion powder, salt, and black pepper, stirring until the gravy thickens (around 5-7 minutes).

Cook the Eggs
3. In a non-stick skillet, fry the eggs sunny-side up according to your preference.

Assemble the Poutine
4. On a serving plate, layer the roasted home fries, sprinkle the cheese curds on top, and drizzle with the brown gravy. Finally, place the sunny-side up egg on top of the poutine.
